Maple Squished Sweet Potato Bake W/ Spiced Pecan Streusel

"I have no idea where I found this recipe, but I'm adding to our Thanksgiving menu this year."

  • Preheat oven to 350 degrees.
  • Grease a 9-by- 13-inch baking dish; set aside.
  • In a large pot of water, bring sweet potatoes to a boil.
  • Reduce the heat and simmer 25 to 30 minutes until tender.
  • Drain well.
  • Transfer potatoes to a mixer and add butter and salt.
  • Mix until butter is melted.
  • In succession, add milk, syrup and beaten eggs, beating potatoes between additions and scraping down sides of bowl.
  • Mix potatoes until smooth.
  • Transfer potato mixture into the reserved baking dish and smooth the top.
  • To make the topping: In a small bowl, mix butter, brown sugar, flour, pecans, cloves, cinnamon, nutmeg and salt well, then sprinkle evenly over potatoes.
  • Bake, uncovered, in preheated oven for about 25 to 30 minutes, until potatoes are hot through and streusel is toasted and crunchy.

  1. This recipe is simply outstanding! This is similar to the recipe #80593 that my family has been making for as long as I can remember but we all decided we like this one better! What really *makes* this recipe is the spices in the topping. I made exactly to the recipe except that instead of boiling the sweet potatoes, I cut them into about 3/4-inch chunks, drizzled on a tiny bit of olive oil, and roasted them at 400 deg. F for 45 minutes. Made this for a Thanksgiving potluck and my family requested that I make it again Thursday for T-giving day. I'm also printing out a copy for someone else that was at the potluck. Thanks so much for the recipe bayou-mimi!
     
  2. See the crooked photo, lol. This was really, really yummy but too sweet for our tastes. I think I'll try it w/ less brown sugar in the topping & get back to you...

  4. Very good flavor. The streusel didn't bake into a "crust" like I had expected, but I will be making again at Christmas. Probably will double the streausel mix.

I'm married, (almost 30 yrs), to my best friend and fellow foodie. My Icon picture is us in '78. We got married on my Birthday. We have 3 children, and just had our 4th grand (the 1st girl!!) We moved to New Orleans from Ky in 1999 because 2 of our kids were down here having families and I sure didn't want to be a long distance grandma..so we packed up and rented out our house and there we were. I loved that city. Besides my family, of course, I love cooking, cook books, reading,(and reading cookbooks!) my cat, needlework, gardening (but haven't done too much of that here), music,learning about this computer,discovering hidden treasures in the form of restaraunts in New Orleans--I'm not kidding, that place had more places to eat than I have ever seen... and there are so many good ones the bad and mediocre ones don't last long. I also enjoy making food baskets for the holidays, putting in things I have made from candies, breads and cookies to jellies & pickles. We have a cat, Noodle, who survived the "Storm who will not be named" a 19 pound ball of fur love. Now that we've in N.W. Louisiana for almost 2 years, I'm coming out of my culture shock...just because it's Loisiana doesn't mean the food is like New Orleans, in fact this area is more Tex-Mex with a little country thrown in... your basic average good food. Still looking for a place to make me say "WOW" !! I've decided to up date this a little, and it looks like we will be staying here in NW Louisiana for a while anyway.
