Easy Red Beans & Rice With Sausage

  • Cut sausage into 1/2 inch pieces.
  • Lightly brown.
  • Add vegetables.
  • Simmer 5-7 minutes.
  • Add remaining ingredients and bring to a boil.
  • Reduce to simmer, cover with a tight fitting lid, and cook until rice is done.
  • **NOTE** The cayenne seasoning mentioned is NOT straight cayenne pepper. Try one of the seasonings such as Tony Cachere's or Emeril's cajun seasoning. Sorry for any miscommunication.

Beans/Rice/Sausage is a dish I make when I want to put NO effort into dinner whatsoever, so I was a little skeptical of this recipe because it requires a LITTLE effort :) I wasn't sure it'd be worth it... OH MY GOD... SOOOOOO worth it. This is a regular rotation for us because its delicious, filling, 2yo ds and 5yo dd both love it too, and its inexpensive!! Thank you!!
     
  5. Made this in my instapot. Fantastic! I made only one change, and that was to leave out the chopped celery owing my a picky teenager. (Snuck in celery puree. :) Shh! ) Thanks! This will now be added to a weekly menu plan!

Tweaks

  1. I like the taste of Tony Cachere's but there is something in it that makes me sneeze like crazy. I substitute Old Bay and red pepper flakes to taste.
     
  2. I need to use brown rice , should I cook it before putting into recipe ?
     
  3. I accidentally bought chicken stock instead of broth, I got the no salt added kind. Turned out great. I added a yellow Bell pepper for the second pepper. Also added about a half tablespoon of garlic. Also used actual red beans. And I used some tomatoes with green Chili's. And I used bold Creole seasoning. The only water I used was what was in the tomatoes. I guess looking at it, I completely changed it. Lol
     
  4. Vegetarians here so I used Gardein vegan sausage and vegetable stock. Also added a can of petite tomatoes instead of the additional cup of water. Was delicious! Will do again.
     
  5. I love this recipe! I made it into my own recipe since I didn't have all the ingredients for the one above. ( originally was gonna make beef tacos but meat wasn't unthawed and I am pregnant so this was super easy substitute for myself). I used two cans of kidney beans, white rice, cilantro, onions, spinach, and kale. I used thyme leaves, oregano, salt, pepper, salt, basil, and I added hot sauce as well. It came me out great and I would do this again! Thanks for the quick dinner idea on such a short notice!
