Strawberry Cinnamon Cornbread

- 1 cup unbleached flour
- 1 cup cornmeal
- 1⁄4 cup sugar
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 egg, plus
- 2 egg yolks
- 10 ounces strawberry yogurt (or whichever flavor you prefer)
- 1⁄4 teaspoon cinnamon
- 1⁄2 cup raisins (or whichever dried fruit you prefer)
directions
- Preheat oven to 400 degrees.
- Mix dry ingredients in a large bowl.
- Beat eggs.
- Mix egg, yolks, yogurt, cinnamon, raisins, and stir until combined.
- Stir wet ingredients into dry ingredients.
- Pour or scoop batter into a greased (or coated with cooking spray) 9 X 9 pan and bake for 20 minutes.
- Eat until gone.
- Repeat steps 1-7.

I like to cook and bake, but I don't like to limit myself to cookbooks all the time, so I experiment and come up wth my own recipes and tweak other recipes to create my own. Baking is what I enjoy the most, especially hearth breads.
