Creamy Baked Spinach

"I was originally given this gratin recipe by a friend, and it was delicious. But, I couldn't leave well enough alone and have tweaked the recipe this way and that, and I really think it's fantastic - you let me know."

  • Preheat the oven to 425 degrees F.
  • Melt the butter in a heavy-bottomed saute pan over medium heat; add the onions and saute until translucent, about 15 minutes; add the flour and nutmeg and cook, stirring, for 2 more minutes; add the cream and milk and cook until thickened; cool 10 minutes then quickly beat in the eggs.
  • Squeeze as much liquid as possible from the spinach and add the spinach to the sauce; add 1/2 cup each of the Parmesan, Gruyere and cheddar cheeses and all of the feta and mix well; season, to taste, with salt and pepper (you may need little to no salt).
  • Transfer the spinach to a buttered 13 x 9 inch glass baking dish; toss the remaining cheeses with the breadcrumbs and sprinkle on top.
  • Bake for 20-25 minutes, until hot and bubbly; serve hot.
  • Note: This dish can be made one or two days ahead and refrigerated, unbaked, then baked right before serving; bring to room temp before baking.

  1. This is fantastic. I like the fact it makes a BIG pan so we can have it several meals. Reheats great in the microwave. I didn't have gruyere cheese, so I used montery jack. It was delicious. Thank you. I will definitely make this again.

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
