  • 2 tablespoons unsalted butter
  • 2 garlic cloves, gently crushed and peeled
  • 10 -12 ounces spinach, thick stems trimmed, leaves washed and dried well
  • salt & freshly ground black pepper, to taste
  • 1 lemon, halved

directions

  • In a large saute pan over medium heat, melt the butter with the garlic until the butter is golden brown and smells nutty; make sure the garlic doesn’t burn.
  • Raise the heat to high and add the spinach, in batches if need be, flipping and stirring, until just barely wilted, about 1 minute Take the pan off the heat; remove the garlic.
  • Season the spinach with salt, pepper, and a squeeze of lemon.
  • Toss and serve immediately.

  3. Simple and delicious! My daughter loves spinach and this is so quick and easy. I do add a little garlic powder to it just to enhance the flavor a bit more.

  5. I was out of lemon so subbed lime juice and it tasted awesome! Fabulous recipe; the only way I can get my kids to eat spinach.

Tweaks

  1. This was great, i used olive oil instead of butter, touch of balsamic instead of lemon, no salt but pepper...yummo! Next i will try the lemon
     
  2. This spinach even had a spinach hater saying yum. I used minced garlic as I was out of whole cloves so I left it in and it still tasted good. Next time I'd like to substitute red wine vinegar for the lemon juice. Served with recipe #106715 and recipe #183349
     
  3. I used "I Can't Believe it's not Butter" instead of butter because of the saturated fat level, and used lemon pepper instead of 'salt & freshly ground black pepper. It turned out wonderful! Really loved it as did my company.
     
  4. Excellent sauted spinach. I minced my garlic instead of crushing and left it to mix with the spinach and coat the leaves. Because I used minced, I had to start browning my butter before adding the garlic (so as not to burn the tiny pieces), but it was still infused with that lovely garlicky aroma and flavor. Thanks for posting.
