- 1⁄2 lb butter, softened (1 cup)
- 1 cup sugar
- 6 eggs
- 2 (20 ounce) cans crushed pineapple, undrained
- 12 pieces white bread or 12 pieces whole wheat bread, toasted and cubed
directions
- Preheat oven to 350.
- Beat together butter, sugar, eggs.
- Stir in pineapple and cubed toast.
- Pour into ungreased 13" x 9" pan and bake for 45-50 minutes or until top begins to brown.

What a surprise, I made this as a side dish for a vegetarian friend on an unexpected visit. This is a type of fruity French Toast and while the first bite was rather a surprise, it quickly grows on you and we both polished off two slices each and she was keen to take the leftovers home too. I can totally imagine that this would go well with meat, and my half sized version of the recipe went a long way too, whilst still being easy to make. Please see my rating system: 4 lovely stars for a recipe that is very tasty and that I will have pleasure in making again. Thanks!
