  1. After noticing how dry the batter was I read these reviews. I decided to add one mashed banana. They came out perfectly! The banana definitely helped/added the needed moisture. They are delicious! I'm sure that you could add some applesauce (1/2 a cup?) if you do not like bananas.
     
  2. Agree with other reviews: something is wrong with this recipe. The ratio of the flour mixture to wet ingredients is off. I followed the recipe exactly as written and it produced heavy, dense, dry muffins. The flavors are good, however.
     
  3. Too many ingredients, unusual for food network to have a recipe that doesn't work.
     
  4. Don't use this recipe. There is either too much flour or too little liquid.
     
  5. These muffins are so good and so good FOR you! I replaced one of the cups of flour with whole wheat flour, added 1/2 cup of bran, doubled the spices, used ener-G egg replacer, and added enough soymilk to bind the ingredients. I sprinkled oats over some of them and mixed oats into the rest. They were delicious! Other tasty additions would be raisins or coconut. Definitely a keeper!
