Roasted Red Onions With Thyme and Butter

- 8 medium red onions (equal size, med-large)
- 3 1⁄2 ounces butter
- 1⁄2 ounce packed thyme, rinsed and picked
- sea salt, to taste
- pepper, fresh ground to taste
directions
- Preheat oven to 400°F.
- Remove the 1st layer of skin from the onions. With a knife take off the bottom core end of the onion to give it a flat base.
- Make two cuts in the top in a cross shape cutting 1/2 way through the onion (Do not cut through into quarters!).
- Mush the butter and thyme together, and then push into the gaps of the onions. Season with a good pinch of salt and pepper.
- Cook the onions tightly packed in a earthen ware dish on a light bed of sea salt.
- Place in the preheated oven for about 30-35 minutes.

I love onions, too. And this recipe is an absolute must for all onion lovers. All others will be onion lovers after they have tried this one. The recipe is so easy - it is foolproof. But the outcome is delicious. The baking on salt gave the onions a wonderfull texture. Firm, but with a tasty moisture. The butter and the thyme add a fantastic flavor to the onions. These onions would go well together with any other main dish. But try them also as a snack or as a starter. My suggestion: Try them in any way. They are wonderful.

I live in Las Vegas. I was lucky enough to run into Recipezaar around Nov. 2000 and got hooked quickly. I am a cookbook collector and have been collecting recipes for as long as I can remember.
