Shrimp Macaroni Salad

"this recipe comes from a great restaurant in my area called "River's Edge" A nice dinner for a hot summer day. Serve with some crackers & fruit, dinner's ready."

  • Blanch pasta in boiling water for 9 minutes.
  • Rinse in cold water.
  • In a large bowl combine all other ingredients & toss with pasta.
  • Cover & chill for flavors to combine.
  • Stir well before serving.
  • Makes about 2 quarts. Prep. time does not include "chilling".

  1. I made this recently for a family reunion. Since I wasn't sure how much to make, I prepped everything and transported each measured ingredient in Ziploc baggies then put it together upon arrival. It was a huge hit! Instead of fresh herbs I got the ones in the squeeze tubes and they worked great.<br/><br/>For those of you who are like me and not used to making quantities, one of these makes enough to fill one of those half-pan aluminum disposable trays.

  4. I made this pasta dish 2xs last week.. once was for my twin’s birthday and everyone loved it!! I’ve gotten asked by a few people how to make it. The only diff I did was use diff pasta (not elbows) and I didn’t use the red peppers Just the green ones ... DELICIOUS!! ??????????
     
  5. Making this for a 4th of July party. Adding a nip of Texas Pete hot sauce. It will be sooo yummy.

Greetings from God's country, the beautiful state of Oregon. We have very cold winters here so I stay indoors & cook alot in the winter months. I love trying out new recipes. Thankfully my dear husband is game for anything, he'll eat it even if it turns out bad. Like the chicken & dumplings that turned out to be chicken & dumpling soup!!! I'm 58 yrs. old & have been in the kitchen for many years & find RecipeZaar my favorite cookbook, don't know how I got along without it.
