Knobby Apple Cake

  • Cream together sugar and butter.
  • Add beaten egg and mix well.
  • Add diced apples, chopped nuts and vanilla.
  • Sift together flour, baking soda, salt, cinnamon and nutmeg and stir into mixture.
  • Place batter into 8" square greased pan.
  • Bake at 350° for 35 to 40 minutes.

  1. The smell of this cake cooking is heavenly, so I wasn't surprised to taste that first delicious bite. The crunchy edges are the best part! I used pecans and a bit more cinnamon. And of course a scoop of vanilla ice cream. The apples need to be peeled and I recommend cutting them in 1/3" squares. I'd give this recipe 10 stars if I could. It's a keeper!
     
  2. I've had this recipe for years. We love that the top "crust" tastes like a Snickerdoodle Cookie. I gave it to an old neighbor of mine and she had taped it to the inside of one of her kitchen cabinet doors and forgot to take it when she moved! I was happy to oblige and give it to her and also happy to see it on line! It's great with low fat Cool Whip or ice cream too.
     
  3. I'm a newbie in baking and the taste was great. The cake smells so great with flavors of apples and cinnamon exploding in your mouth. BUT the cake does not hold up very much. I thought i was making apple crumbs instead of an apple cake. Also, the cake is very uneven and mine has lots of holes on the surface making it pretty ugly. I'm sure it's me but can someone tell me why? Did i overmix the batter? But overall, this recipe is perfect for a really good dessert!
     
  4. I made this today and it was fantastic. Just like a cake my mom used to make. I put everything except the nuts into the food processor (even the apples) then I topped it with nuts and brown sugar. It was a very moist yummy cake. Thanks for posting.
     
  5. I made this using 1/2 Splenda for the sugar and pecans for the chopped nuts. Other than that I made it as written and served it topped with Old-fashioned Vanilla Ice Cream recipe #97709 by evelyn/athens. It made a wonderful dessert. Thanks.
