Baked Dijon Chicken

"This is an interesting twist on baked chicken. I'm normally not too much of a mustard fan, but I absolutely love this dish!"

  • Preheat oven to 475°F Spray 13" x 9" baking dish with nonstick cooking spray.
  • Combine mustard & evaporated milk in a shallow bowl & mix bread crumbs & cheese in a separate bowl.
  • Dip chicken into mustard mixture, coating both sides, then into bread crumb mixture until chicken is covered. Repeat with each piece.
  • Place chicken in prepared dish & bake for 15-20 or until chicken is golden brown & no longer pink in the center. Enjoy!

  4. We all loved this! I used some homemade whole wheat (actually Ancient Grains) breadcrumbs for the breading. And since I ended up using all my evaporated milk, I simply did a two to one ratio of powdered skim milk to water. It worked out beautifully. Even the dijon haters in the house loved this. I do not know how my family got along without this recipe before! my children will hardly acknowledge anything but chicken and I was running out of ideas so I jumped on recipezaar...and boy am I glad I did! This is a family favorite now. Thank you Mama Jennie for such a yummy recipe. I didn't have any evaporated milk so I did use half & half and it came out just fine! Thanks again!!
