  • Toast walnuts in a small skillet over medium heat for about 5 minutes, or until fragrant, but not browned.
  • Slit dates lengthwise, but do not cut all the way through.
  • Cut Parmesan into thin shards, about the length of the date.
  • Stuff a shard of cheese and a walnut half into each date.

  3. Excellent quick appetizer. Three different flavors all packed into a little bite. Sweet, sharp and nutty. You can only eat a few of these guys, they are very rich. I cut the walnut halves into half. They fit into the dates better. I also used the potato peeler to shave of the slices of cheese. Made this for a family gathering. Everyone who tried them gave two thumbs up. Thanks kiwidutch for posting.
     
  4. Very good! I took these to a rather nice finger food gathering and people loved them. I used a nice vegetable peeler to make long slices of parmesan from the wedge, then cut and broke them to size to fit in the dates. Use as much as you want! Allow extra time to putz around and make these, especially if doubling or tripling the recipe as I did. Also, I would eat them within a few hours of making them.
     
  5. What a taste experience! I love the sultry, smoky walnut flavour that comes through in combination with parmesan and date. The other reviewers have said it all. A great contribution to a table of appetizers and finger food, and makes an attractive presentation (mine looked like little ships with the shaved parmesan!) Thanks for posting!
