  • Heat a large skillet over moderate heat. Add oil, butter, garlic, and shallots. Gently saute shallots for 3 to 5 minutes to develop their sweetness. Reduce vodka by half, this will take 2 or 3 minutes.
  • Add chicken stock, tomatoes. Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper as much as you like.
  • While sauce simmers, cook pasta in until cooked to al dente.
  • Stir cream into sauce. When sauce returns to a bubble, remove it from heat. Drain pasta. Toss hot pasta with sauce and basil leaves.
  • This recipe will make enough for 2 couples. To serve a romantic dinner just for 2, reserve half the sauce to freeze for another supper before the addition of basil, and only cook half the pasta.

  1. This was very good, and very easy. I am only giving it 4 stars tho, because when made as the recipe states, I too found it to be a bit bland. I added more basil, a tablespoon of sugar (needed it to balance the flavor, not to make it sweet) and a good handful of grated Romano cheese. I served it with Recipe# 59626 Cheesecake Factory Romano Chicken, and a thick slice of a good roasted garlic bread. It was really good.

  3. We love this stuff! Usually double it so we have leftovers for lunches and sometimes add a pound of browned Italian sausage.
     
  4. Excellent and easy recipe!! I however let the sauce simmer more so it thickens and I add some Parmesan Cheese for some extra flavor. Also, there is no need to use a 32 oz can, use a 28 oz can for a thicker and richer sauce!! Enjoy! :)
     
  5. I agree with other reviewers that this recipe was easy. I gave it 2 stars (fair) because we found it pretty bland. If you have to make a number of changes to pump up the flavor, I see this as a different recipe. I wouldn't make this again.

Tweaks

  1. This was quite good...I followed the recipe but made a few minor changes. Instead of chicken stock I used vegetable broth...and instead of fresh basil I used crushed basil from the spice rack. For the salt, I found that I had to add about 1 Tbsp. salt. I did find the sauce a bit runny at the end so I added about 1/2 cup grated Parmesan Cheese to absorb some of the liquid and thicken it up. After sitting for about 5 minutes it thickened up a bit. However, I think next time I think I might try only 1/2 cup broth instead. I will definitely make this again. thanks.
     
  2. Quick, easy & flavorful! I used fat free half and half mixed with 1 tbs. cornstarch instead of the heavy cream and I served it with pan grilled chicken. Thanks for posting!
