Broccoli Salad With Apricots

"This is another recipe that my sister and I came up with for our home study group. The tartness of the dressing and the sweetness of the fruit make a wonderful combination. We found, for us anyway, that by adding a little Miracle Whip to the dressing we could cut down on the amount of sugar."

  • Dressing:

  • Mix together the vinegar, mayo, miracle whip and sugar and mix well.
  • Combine the remaining ingredients except nuts and bacon bits and mix with the dressing.
  • Mix in the bacon bits and pecans just before serving.
  • Chill before serving for about 30 minutes.
  • Fell free to add additional fruit to taste.

  1. This was a great salad. I used Olive oil-mayo instead of regular mayo, and it turned out great! I wondered if I would miss the cheese since I think cheese goes with everything, but I did not. Thanks for sharing this!
     
  2. Wow, what a great recipe! I didn't have all the ingredients on hand and it was still great! Substituted almonds, cooking onion, mayo and apple cider vinegar. Can't wait to try it with all the correct ingredients!! Thanks for a new addition to my repertoire!

  4. Very Yummy! Love the mix of apricot, pecans, onions, raisins and broccoli. Did change just a little by leaving out the Miracle whip and the bacon, but other wise made as written. Yes I just have to say it one more time Mmmm, Mmmm, Mmmm. Thanks for the post.

The only deviation I made was to use Vidalia Sweet Onions instead of the wonderfully colored purple onions...discovered mine was bad when I made the salad. Made for Potluck tag.

  2. This is a very nice salad. I blanched the broccoli for 1 minute. I used mayo and sour cream instead of Miracle Whip.. I also used dried cranberries instead of raisins.Thanks!

I was one of the original members of Recipezaar that was truly a community of individuals that enjoyed each other in forums and chat rooms. I've been a member of this site since 2003. Made some tremendous friends that I still think of often. I'll continue coming here because my recipes are here and so many more that I tried over the years as a member.
