  • In a small jar add all ingredients and shake until blended.
  • Combine all salad ingredients in a bowl and pour dressing over, gently tossing together until blended. Cover and refrigerate until chilled.
  • Before serving toss again and adjust seasonings if needed.
  • Serve on lettuce leaves.
  • This recipe is low fat and low calorie.

  1. I made this chicken salad with some believe it or noy frozen grilled chicken strips, and we had some Ocean Spray Craisins so I added those and it was AMAZING! 10 YUMS and 10 shiny gold stars for this one for sure! I'll be making this one again!
     
  2. I used dried cherries and added a little more mayo and a bit of sugar. Just a little too tangy without it.

My fiance and I really enjoyed the flavors in this, but found that it a) took longer than the stated time to prep everything, and b) just didn't have the cohesion that we usually prefer in a chicken salad. We like to make sandwiches out of chicken salad, so I think that next time we'll probably add more dressing so it stays together better. All in all, we enjoyed this, but we have a similar recipe that is more to our tastes. Thanks for sharing!
     
  4. I am going to come back and rate this after I make it again with fresh chicken. I have never had canned chicken before but I had some in the pantry and tried it, yuk! It tasted a whole like tuna, how strange. In any case, I know that had nothing to do with this recipe and I am certainly going to try this again, still sounds delish...just wanted to warn people not to try and take that short cut like I did! :-)
     
  5. This is SUPER GOOD and makes a perfectly healthy box lunch! I chopped everything a little finer, so I could spread on whole grain bread. It kept very well in the refrigerator for several days. A great feel-good recipe!

Our picture was taken at Bryce Canyon NP when we celebrated our 47th anniversary. (It has now been 54 years!!) <br> <br>Of course, I love to cook and bake. Desserts seem to be my specialty, however my husband & I like Mexican, Southwest, Greek, and Italian cuisine alot. Healthy food(soy milk, tofu etc.), alot of raw vegetables and made from scratch comprise much of our diet. I have always had problems cooking fish, tho we do like to eat fish. We are both retired. <br> <br>I love Labrador Retreivers and have owned, trained and shown several very nice ones! <br> <br>My husband and I are both natives of Colorado, however somehow we ended up living in St. George Utah, in the South west corner, near Zion, Bryce, & Grand Canyon National Parks, which we enjoy alot. Before the price of gasoline took a jump, I volunteered at Zion NP. <br> <br>We celebrated our 53th wedding anniversary in the summer of 2008.
