- 1 (15 ounce) can pumpkin (not pie filling)
- 1 (5 ounce) can evaporated milk
- 1 egg, beaten
- 1⁄3 cup sugar
- 1⁄4 cup packed brown sugar
- 1 1⁄2 teaspoons flour
- 1 teaspoon pumpkin pie spice
- 1⁄8 teaspoon salt
- 1⁄2 cup flour
- 1⁄2 cup sugar
- 1 1⁄2 teaspoons baking powder
- 1⁄8 teaspoon salt
- 1⁄2 cup milk
- 1⁄4 cup butter, melted
- 1⁄2 teaspoon vanilla
directions
- To make the filling: in a mixing bowl, combine the pumpkin evaporated milk, and egg.
- Add in 1/3 cup sugar, brown sugar, 1 1/2 teaspoons flour, pumpkin pie spice, and 1/8 teaspoon salt; whisk lightly just until combined; set aside.
- In another bowl, combine 1/2 cup flour, 1/2 cup sugar, baking powder, and 1/8 teaspoon salt.
- Stir in the milk, 2 tablespoons melted butter, and vanilla.
- Pour the remaining melted butter into a 2-quart square baking dish, tilting dish to coat.
- Pour batter into dish, spreading evenly.
- Spoon pumpkin mixture on top.
- Bake, uncovered, at 350° for 45-50 minutes or until top is golden.
- Serve warm.
