  • To make the filling: in a mixing bowl, combine the pumpkin evaporated milk, and egg.
  • Add in 1/3 cup sugar, brown sugar, 1 1/2 teaspoons flour, pumpkin pie spice, and 1/8 teaspoon salt; whisk lightly just until combined; set aside.
  • In another bowl, combine 1/2 cup flour, 1/2 cup sugar, baking powder, and 1/8 teaspoon salt.
  • Stir in the milk, 2 tablespoons melted butter, and vanilla.
  • Pour the remaining melted butter into a 2-quart square baking dish, tilting dish to coat.
  • Pour batter into dish, spreading evenly.
  • Spoon pumpkin mixture on top.
  • Bake, uncovered, at 350° for 45-50 minutes or until top is golden.
  • Serve warm.
