Peanut Butter - Banana Pudding

"A twist on the old-fashioned banana pudding, using chocolate wafers, instead of vanilla ones, and peanut butter. Prep time does not include chilling."

  • Combine first 3 ingredients in a heavy saucepan; whisk in eggs and milk, and cook, whisking constantly, over low heat until thickened (about 25 minutes.) Remove from heat and stir in butter and vanilla. Set custard aside.
  • Spread a 1/2 teaspoon of peanut butter between 2 chocolate wafers, forming a sandwich; repeat with remaining peanut butter and chocolate wafers.
  • Place sandwich cookies in the bottom of a 3-quart glass bowl or trifle bowl; top with banana slices. Pour custard over bananas. Cover and chill 4 hours.
  • Spread whipped topping evenly over the custard and sprinkle with peanuts before serving.

  1. This is excellent. I will probably take it to a potluck or family reunion. I was craving banana pudding and decided to try this one because it also included peanut butter and chocolate. It was worth the effort to make the custard from scratch. I could not find chocolate wafers and used chocolate bear-shaped cookies. I also softened the peanut butter in the microwave and poured it over the cookies instead of spreading between two wafers. Thanks for a great twist on regular banana pudding!

<p>I recently celebrated my 19th anniversary living in SW Florida. I moved here from Massachusetts, just north of Boston. As much as I miss family back home, I truly love living here - the beaches, the tropical beauty, the people, and the weather (except the hurricanes!). Everyday is just another day in Paradise.
