  • Set oven to 350 degrees.
  • Line 24 regular-size muffin tins with paper or foil liners.
  • In a large bowl beat the cake mix with baking cocoa, eggs, oil, buttermilk and food colouring for about 2 minutes, scraping down the sides of the bowl occasionally.
  • Spoon the batter evenly between the muffin tins about two-thirds full.
  • Bake according to package directions for cupcakes or cake.
  • Remove from the pans immediately and cool on wire racks.
  • Spread tops with cream cheese frosting.

  1. I am wondering if this will work with more than just cream cheese frosting. If I do make it with another type of icing, will this effect my cupcake? I'm an experienced home baker and I am basically asking if I can do more with the icing in this specific recipe. As I bake I am always experimenting with my ingredients trying to make my dessert better or a different flavor THANKS FOR THE RECIPE!!

  1. These were very easy and good red velvet cupcakes. The only concern I would have is the amount of red food coloring. I made a double batch and used 2 bottles of food coloring (1/2 the amount called for in the recipe) and they were extremely bright red. I can't imagine using more than this and would probably use even less next time. The texture and flavor was really good and enjoyed by all. Thanks for posting!
     
  2. These were great! Even the batter was tasty ( I used egg beaters with yolks so it was OK) . Also I only needed one bottle of red food dye to get a bright red color. The texture was rich and you would never know there was a mix. Thanks for the great recipe, there are a few en route to a friend to solve her boy problems , they are thatgood

  4. I made these cupcakes yesterday for an event for today. For my taste I added another tablespoon of coco powder which gave the finished cake a darker red appearance. There was one flaw with the recipe in the fact that the cooking time was left out. Otherwise the recipe was delicious and easy to make. I topped the cupcakes with freshly made whipped cream and they were loved by all who attended!
     
  5. This cake was a hit, it was very moist and tasted just like the 'from-scratch' red velvet that I've had. I used store-bought cream cheese frosting as the layers in a 9 inch round birthday cake and used Kittencal's Buttercream recipe to frost and decorate the outside.

Tweaks

  1. These were good and very simple to make! I made them "green velvet" for my daughter's preschool class for St. Patrick's day. They were a hit. I used 1 one ounce bottle of green food coloring in place of the red food coloring. The cupcakes were plenty green with this amount. I may even use a little less next time. Thanks!
