Kinda Like a Stubbs Sandwich

"This is my version of "The Stubbs", which is a breakfast sandwich named after former Dallas Cowboys player Daniel Stubbs, and is from the Coppell Deli, which became a Dallas, TX mini-legend in the early to mid-1990s as the favorite breakfast place of several Cowboys players. We usually eat this as dinner, as these sandwiches are pretty big...just like everything in Texas!"

Ingredients:: 5
Serves:: 2

ingredients

4 (1 1/4 ounce) breakfast sausage patties
4 slices bacon
2 slices American cheese
2 eggs
4 slices Texas toast thick bread

directions

In a hot frying pan or electric skillet, cook sausage patties; set aside and keep warm.
In hot frying pan, electric skillet, or microwave, cook bacon; set aside and keep warm.
Fry eggs, in same pan if desired, until yolks are cooked.
Place slice of cheese on top of each egg to melt slightly.
Assemble on Texas Toast in this order for each sandwich: 2 slices bacon, 2 sausage patties, 1 egg.

Yum, Yum, Yum, Yum!! This is such a simple but delicious breakfast sandwich. I wouldn't change a thing, but I did use hot and spicy sausage patties, otherwise it was as directed. Thanks so much for posting. Made for you Football Pool win. Congrats!

DH made this for his breakfast this morning before heading off to work. I know this because at 5 a.m., all of the smoke alarms in the house went off. Not sure why he decided to cook at 5 a.m., but when I asked him, he told me it was because the recipe looked to good to pass up another day (I had given him the recipe when I got home last night). He asked if there was any way to give this recipe 10 stars as a rating and I told him the only way to do that would be to rate it twice with 5 stars!!! HE ATE AND LOVED BOTH OF THESE SANDWICHES!!! T.A., you might have to adopt him now!!!!
