12-18 muffins
ingredients
- 2 1⁄2 cups cake flour
- 2 teaspoons bicarbonate of soda
- 1⁄2 teaspoon salt
- 1 1⁄2 cups brown sugar
- 2 cups natural bran
- 1 cup raisins or 1 cup sultana
- 2 eggs
- 1⁄2 cup vegetable oil (NOT olive oil)
- 2 cups milk
- 1 teaspoon vanilla essence
directions
- Sift flour, bicarbonate of soda and salt together.
- Add brown sugar, natural bran and raisins or sultanas.
- Beat eggs with vegetable oil, milk and vanilla essence.
- Mix roughly into dry ingredients. Mixture should be lumpy; do not overmix.
- Spoon into greased muffin pans.
- Fill each cup by approximately two thirds.
- Bake at 180 degrees Celsius (350 degrees Fahrenheit) for 10 - 15 minutes.

i used RZ's conversion for cake flour, 1 cup of cake flour = 1 cup less 2 tbsp all purpose flour. I just love these muffins and made them with chocolate chips instead of raisins. i used slightly less oil as I ran out; didn't hurt the muffins either. The natural bran gives the muffin a nice texture. I got 19 regular sized muffins. Thanks for sharing. Made for PRMR.

Cake flour isn't in my pantry, so I used foodtvfan's formula for a substitute, & that worked very well for me! We thoroughly enjoyed these, & my other half is a happy camper taking a couple to work each day, so I'll definitely be making another batch soon, maybe doubling it so I can have some onhand in the freezer as well! Delicious healthy muffins. Bought cake flour and natural bran at the bulk food store. Added 1/2 cup chopped toasted walnuts. Another keeper for my ever growing Favorite Recipezaar recipes binder! If you do not have cake flour, and do not want to make a trip to the store, you can substitute using the following formula: For 1 cup sifted cake flour mix together 2 Tablespoons cornstarch plus 3/4 cup sifted, bleached, all-purpose flour. Will make these again real soon and try adding some chopped apricots for a variation.

I made a few changes and they still turned out great! I used 1 C freshly ground whole wheat pastry flour and the rest all-purpose. Used 1 egg and 1 "egg replacer", canola oil, powdered milk (was out of liquid) and only 1 C of brown sugar, bcz I used choc. chips instead of raisins. It made 22 muffins full to the top and I put them in muffin cups, ungreased. They popped right out. With my changes, it brought the sugar down to 12 g. My kids liked it, although it wasn't too sweet. It was very light too. It did take me 20 minutes in my 375 F oven. Made for Veg*n Swap 5.

Karen this were really yummy. I like making healthy snacks like these for my toddler instead of cakes and sweets. These were light fluffy and delicious. I made two changes I used brown sugar which gave it a nice colour and instead of raisins I used dates because we are not raisin fans. The dates kinda melted in and made it really nice. My DH asked me too pop one of these in his lunch as long as there was any left.Thanks Karen. I will make these often. I got 18 muffins making it cupcake size.
