Sun-Dried Tomatoes

20 sun dried tomato halves

ingredients
- 10 roma tomatoes
- kosher salt
- 1 tablespoon white vinegar
directions
- Cut tomatoes in half lengthwise with membranes in center.
- Scoop out seeds and juice with back of thumb.
- Cut wedge to get rid of core.
- Place on drying rack.
- Sprinkle lightly with salt.
- When dry, not brittle, just slightly rubbery, remove from rack and place in bowl.
- Toss with vinegar until all are moist, but not wet.
- Pat excess moisture with paper towel.
- Place in ziplock bag, squeeze out air, zip, and refrigerate in vegetable bin. (I keep mine for up to a year).

Fantastic recipe/technique! I only had 4 large roma tomatoes, but I was determined to make this anyway. (I love my dehydrator!) It took many, MANY hours -- about a day total, but at about 50% heat for the second half). We just used some for Recipe #177155 and it turned out beautifully. What wonderful directions and photographs you took! Can't wait to use these in more dishes. Thank you, Barbara, for this winner!
