Orange & Date Muffins

"These are so good. My favourite breakfast muffin. I hope you'll enjoy them as much as I do, served hot or cold with sweet butter. What could be better with a cup of hot tea."

  • Preheat oven to 400 degrees.
  • Cut orange into bite size pieces, removing only the seeds.
  • Place the orange into an electric blender on grind, while grinding add the juice, egg and butter into the blender and mix well.
  • In a seperate bowl add flour, soda, baking powder, sugar, salt, cinnamon and nutmeg.
  • Add the candied orange peel, dates and walnuts to the orange mixture and pour over the dry ingredients and stir lightly, until just combined.
  • Place batter in lined muffin tins and bake for 12 - 15 min in a 400 degree oven.

  1. 5 BRIGHT Star Kato! So moist and flavorful. I added a couple tablespoons of flax seed meal to the batter and substituted 1/2 of white flour for 1/2 cup of white whole wheat flour. The recipe made 6 giant muffins, which I baked at 375 for about 22 minutes. Definitely a keeper. THANKS!
     
  2. These are definitely OUTSTANDING! I really loved the combination of orange & date. I didn't have any candied orange peel, so I plugged that into ZAAR search, came up with a recipe & made my own [still have to rate that recipe!]. A very outstanding recipe, Baby Kato ~ Many thanks for posting it!
     
  3. These are outstanding! So cool to put a chopped up orange, peel and all into the blender. I thought it might be a tad bitter from that but it wasn't. I followed the recipe exactly but I used pecans and put them on top. The only problem I had was my fault...they looked done so I took them out and after they had cooled a bit tried one and it was still uncooked in the middle so I put them back in the oven and it worked out fine. I enjoyed these warm, cold and with and without butter. Very nice orange flavor and soft muffin texture. The dates were a bonus but it would probably be good without them too and I might try adding chocolate chips instead of dates next time. Thanks for a keeper recipe! Made for Zaar Tag.

I am a very lucky lady. I recently moved to a very small town in New Brunswick, Canada with my wonderful husband who is my best friend.
