  • Preheat oven to 325-350 degrees.
  • In a large black (iron) skillet, over medium heat, pour in water and sugar. Stir to mix.
  • Add in vanilla and cinnamon.
  • Pour in peanuts and mix together in the sugar water mixture.
  • Make sure all the peanuts are wet and coated in the mixture.
  • Bring water mixture to a boil stirring occasionally.
  • As water begins to evaporate watch the nuts carefully.
  • CRITICAL: As water is evaporating stir nuts and once there is no more water left and the nuts are dry pour onto a cookie sheet.
  • Sprinkle with salt over the top and bake for approximately 10 minutes.
  • Stir nuts then bake 10 more minutes.
  • Pour onto cool tray and let the nuts cool down.
  • Enjoy.
  • These store really well in ziploc bags and are good to ship as gifts.

  4. this wasn't the exact flavor I was looking for, but they were still awesome! I didn't even measure the cinnamon, I just dumped a bunch in as I LOVE cinnamon. The recipe was super easy, and the first step of boiling them will make you think you are doing something wrong, but just follow the recipe and they actually DO come out coated in the end. I took mine off the flame once the pan was getting sticky because it was too dry. YUMMY
     
  5. I made these to include in a gift basket and wish I'd made a little extra to keep at home. The nuts are wonderfully crispy crunchy with a mild vanilla essence and cinnamon flavor. I used about 1/4 tsp. vanilla and 1/2 tsp. cinnamon and next time will add a little extra cinnamon. Also, the salting here is important as it balances out the sweetness of the coating. Thanks.
