  • preheat oven to 275 degrees fahrenheit.
  • Place briskets in pan fat side up in foiled pan. Do NOT add water. Sprinkle with garlic, pepper and salt. Cover and cook for 6 hours. Uncover for last hour of the cooking time.
  • It makes its own gravy. If you think you will need more gravy, you can add a little water to the pan drippings and flavor with boullion, garlic and pepper.
  • Before slicing, scrape the fat layer off the top of the meat. Cut against the grain of the meat.

I love to pick up cookbooks in different areas of the country especially ones put together from homecooks like the fundraiser type.
