Broccoli Cheese Souffle

  • Preheat oven to 350 F, fill round cake pan or pie pan with 1/2 inch boiling water.
  • Steam broccoli florets until tender.
  • Melt butter in medium sauce pan.
  • Add flour to melted butter until smooth.
  • Slowly stir in milk.
  • Once mixture is smooth add onion, nutmeg and cheese.
  • Add broccoli to mix.
  • Whipp egg whites into soft peaks.
  • Slowly fold in cheese mixture, do not stir.
  • Pour egg and cheese mixture into round csserole dish with high sides, approx 1 1/2 quart.
  • Place dish in pan with water, bake for 50-60 minutes.

  1. I hate to enter a bad review, but I made this without sauteeing the onions because it was not called for in the recipe. They were somewhat raw in the souffle. Also, by just using egg whites, the souffle was a bit tasteless, IMHO, but I am glad that other reviewers liked it.
     
  2. This was my very first souffle. I, too, was concerned about raw onions, so I sauteed them for about seven minutes, and cooled them completely. Also, because I've never made one, I didn't know if I was supposed to let the cheese/broccoli mix cool before I added it to the egg whites. So I turned off the heat and left it on the stove while I whipped the egg whites. I didn't grease the dish, or add salt. I followed the recipe exactly and neither was mentioned. The soufflee collapsed within about 30 seconds, but I think that's what it's supposed to do? It also stuck to the dish, but not so much that I couldn't get it out. It did make for a rough looking portion though. With all of that said, this is honestly one of best things I've eaten in my life, no kidding! Fluffy, and moist, cheesy, and delicate! I could have eaten the whole thing in one sitting. Had to remind myself that there's a cup of cheese in it! Husband loved it as well, and we have one portion left. Is this supposed to feed six? No way! It'd only feed one if I had my way! This is awesome! Would love to have my questions addressed if possible.
     
  3. Yum!! Very easy to put together, however, I was confused about the onions. I assumed they should be sauteed, but the instructions didn't note when, and I can't abide by raw onions. I ended up "cheating" and used dried minced onion and added it with the broccoli. It worked great. I increased the recipe so I could use up 5 egg whites. My husband and I and two kiddos (ages 4 and 1) ate nearly the whole thing for dinner. (I can't imagine that the original recipe could serve six.) Both of the kids loved it!
     
  4. Oh wow, heaven. I'm in love with this souffle. The recipe is easy to throw together, I will make this often! Made for PAC Spring 09.

I am a Type 1 diabetic with an awesome husband and kitty. My diabetes was very sudden but I have learned a lot about it in the last year and I am managing it pretty well with my latest A1c at 6.8%. I have always loved to cook and enjoy looking for new recipes to spice things up some. My husband hates having the same dish twice in one month, so I face many challenges to come up with new things. I also enjoy quilting and journaling.
