directions

  • Add water, 3 eggs, butter, salt, flour, 2 Tablespoons sugar and yeast to bread machine pan in the order suggested by manufacturer.
  • Select dough/manual cycle. When cycle is complete, remove dough from machine to a lightly floured surface.
  • If necessary, knead in enough flour to make dough easy to handle.
  • Shape into rolls as desired.
  • Cover and let rise in a warm, draft-free place until almost doubled in size, 20-30 minutes.
  • Combine lightly beaten egg and 1 tablespoon sugar, brush onto tops.
  • Bake at 375°F for 12-14 minutes or until done.

Questions & Replies

  1. I wanted to ask. Can these be made gluten free? I got the 1 to 1 gluten free bob's red mill baking flour. Made these exactly like last time, the dough was so dry and I had to add a lot of water... They're currently in the oven, but I do not think they'll turn out well.

  2. I will be making these for an out of town Christmas dinner. Do these travel well if I make them a day ahead? Not sure how to store them...break apart or just cover the 9x13 in saran wrap? Any tips appreciated!

Reviews

  1. These rolls are perfect! I have chickens and ducks. I used three xtra large duck eggs. I made them once with all purpose flour and they turned out so fluffy and good! I am making them right now, and am using bread flour this time. I will report back once they come out the oven, if they're better with all purpose or bread flour. This is my go to recipe for dinner rolls from now on! Thanks for posting your recipe :)

  2. Light, Fluffy, Sweet--it is just what you want in a dinner roll. Don't wait until the holidays to try these! These turned out like restaurant quailty. I am really impressed with the texture. I used all purpose flour with good results. Thanks, NIkki Kate, this recipe will be added to my "Best of Zaar" cookbook and I will make them often! KCShell

  3. I was getting ready to smack my friends hand if he took any more before the Thanksgiving meal was fully ready! They were soft and fluffy and everyone was impressed. I accidentally left the dough in the machine after the machine dough and so it finished rising in there. I just took it out, used a rolling pin on a four surface and then used a round cookie cutter that I have to shape them. I brushed the top according to the instructions and tossed them in oven. Serendipity! It was a happy accident leaving the dough in machine. I can't wait to have another reason to make these.

Tweaks

  1. I love this recipe. I have tried a few others but this one has turned out the best and it's so easy to do in the bread machine. I used all-purpose flour instead of bread flour and it still turned out great. These are nice a fluffy and very tasty. They don't last long at my house. Thanks Nikki.

  2. these were good. they were my first attempt at rolls, so they weren't the prettiest, lol, but my dh loved them. i loved the touch of sweetness that the sugar in the egg wash gave. also in the dough i used honey instead of sugar. thanks!
