Zesty Tequila Shrimp Gazpacho

"This is another one of my "twisted" recipes. That is to say a traditional recipe, that I have put my own twist to. (Prep time does not include time to chill.)"

  • Wash vegetables.
  • Chop purple onion, bell pepper, unpeeled cucumbers, celery, and tomatoes.
  • Place chopped vegetables into a large bowl.
  • Add finely minced garlic, olive oil, salt, and pepper, tequila and cooked shrimp; stir gently to combine all.
  • Stir in lime juice and red wine vinegar.
  • Stir in tomato juice and V-8 juice.
  • Cover with plastic wrap and place in fridge until well chilled (about 1 hour for flavors to blend).
  • To serve, ladle each portion into a serving bowl and sprinkle each with desired amount of the chopped green onion.

  1. Excellent recipe!! I had a Shrimp Gazpacho salad at a local restaurant in town and couldn't wait to try making it at home. This recipe was the perfect one, love all the flavors!! Skipped the tequila when I made it, because of our son - but would love to try it again with. Thanks for sharing!!
     
  2. i made this, was great, I blended it so it was more like a gazpacho made in spain and it was great, put in the shrimp after blending it
     
  3. I loved this recipe. It had just the right tweaks... tastes blended well. I love Ceviche and Gazpacho and this is the best of both combined. Great flavor! I'm *keeping* this one saved for a great starter soup for guests! Yum. Thank you for sharing your "twisted" recipe. Family enjoyed it very much. ~V
     
  4. I've never had chilled soup before so this was delightful, the flavour was great and very refreshing perfect for our summer days. Kept everything the same except didn't use the Tequilla as Little Miss (DD) is very young for alcohol and I don't drink. Thank you Bert's Kitchen Witch for our new experience.

Recently moved to New Mexico from South-East Texas. What can I say, I LOVE to cook! My screen name came from my husband Bert. He calls me his Kitchen Witch, because he says that I "make magic" in the kitchen.Bert works in Emergency Medicine in a local E.R.(That's what brought us here to New Mexico.) I have 5 awesome children, 2 step-sons, 2 sons, and a daughter, who because she is the youngest and the only girl, thinks she is a princess.(oh no, she's not spoiled!) I come from a long line of people, on both sides of the family, who were wonderful and creative cooks. I guess that explains my love of cooking and feeding people.I truly get a thrill out of serving food to people who enjoy it.I also love to read, and consume books and information ravenously.I absolutely adore a great mystery.I also would have a hard time surviving without music! I like most all music, from The Beatles, to old Blues(Robert Johnson rocks!) ,to Loreena McKennitt,and Phoebe Snow.I am currently a house wife, due to our recent move.Before that, I worked for several years with abused children in an RTC.(Residential Treatment Center.) My pet peeves are small-minded,prejudiced,mean people and wastefulness.
