Lemony Salmon (A.k.a. Pink Princess Fish)

"After renaming salmon the Pink Princess Fish, my three year old gobbles it up going for seconds and thirds. She loves lemon and this recipe produces a very moist fish. I usually serve it up with a lemony broccoli, also known as fairy trees in our house."

  • In a pan heat olive oil over medium-high heat and then add the salmon with half the lemon juice and salt, and some pepper.
  • Let cook approximately 5-7 minutes depending on thickness and then flip over, adding the remaining lemon juice and salt, and some more pepper. Cook until browned, another 5-7 minutes and then flip and brown other side.

  1. Made for Think Pink 213 Cancer Awareness tag game and this was a winner and so simple. I cut the recipe in half for DH and I and on DH's piece I did add a little brown sugar (he likes a little sweetness with this salmon) and put it in the oven like Bergy but I set the oven at 350 and baked it for about 18 minutes. Delicious! Served with brown rice/ red quinoa mix and fresh green beans.<br/>Thank you for posting.
     
  2. I grilled the salmon on a piece of aluminum foil, skin down. This is my new favorite recipe for salmon. Quick and easy. Made for Think Pink tag for Breast Awareness Month 2010.
