  • Combine first 4 ingredients and roll into 1 inch balls.
  • Drop onto ungreased cookie sheet.
  • Bake 8 minutes at 350 - do not overbake!
  • Combine powdered sugar and lemon juice to make a glaze.
  • Glaze cookies after cooling.

  1. I adore lemon cookies. As written, they weren't quite strong enough for my palate, so I added the zest of one lemon to the glaze and that helped tremendously. Next time, I'll add half the zest to the dough and half to the glaze. If you want higher, more cake-like cookies, use a hand mixer to combine the ingredients. If you want a flatter, crisper cookie, use a wooden spoon to mix them up. I didn't bother rolling the dough into balls. I just dropped teaspoonfuls onto the cookie sheet.
     
  2. I made these last night and they turned out so good and super easy! I filled a sandwich bag with the icing and cut a small hole in it to ice the cookies. I thought spooning the icing on put too much and by using a bag I could just add a little and have cool designs. They were great!
     
  3. DH is the biggest lemon fan. Lemon anything makes him smile but the whole family loved these cookies, glazed, unglazed & I rolled a few in coconut just to make sure I was going to get some by the time I was done making them all. lol Super easy & quick to make; I used a 1-1/2 inch cookie scoop & made scant balls for exactly 3 dozen cookies. I used fresh lemons for the juice in both the cookies & the glaze. The amount of glaze was plenty but I added an extra (probably) 1/2 cup of confectioner's sugar to thicken it up a bit. Another easy recipe to keep on hand. Thanks to Becky for sharing! Made & reviewed for Fall 2008 Pick A Chef.
     
  4. I took these cookies to a fish fry and they disappeared quickly. I had many compliments on them and was asked for the recipe. I made them several times now because there easy and quick to make. I glazed them while still warm with lemon frosting. YUM!!!
