  • In a heavy skillet, heat olive oil on medium-low and add garlic. Cook, stirring occasionally, until garlic is soft but not brown.
  • Add mushrooms and season with salt and pepper. Raise the heat to medium-high, stirring to incorporate the garlic and seasonings. Cook, tossing occasionally, until mushrooms render their liquid and begin to brown, about six minutes.
  • Raise the heat to high, add the sherry and cook, stirring, to continue browning the mushrooms and evaporate the wine.
  • Remove from heat, adjust seasoning and serve immediately.

  3. I can't say enough how gorgeous this dish was. Made a whole range of tapas, and out of them all this was by far the biggest success, the flavours are beautiful, not too savoury not too sweet just right, totally recommend this dish. I will be making it again.
     
  4. Very easy and quick with excellent outcomes. I paired this with Recipe #8233 for an outstanding result. I served this with Recipe #102638 & Recipe #193818 for a theme meal of Spanish Tapas. This was my final recipe in 3 chefs game. I will be using this recipe again. I cut the mushrooms into bite-size pieces to retain more of the flavor of the juices while cooking. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
