Carnitas

"This is my husband's favorite dish. I adapted the recipe from a recipe by Marilyn Tausend and Ricardo Munoz Zurita that was published in Best American Recipes 2004-05. I incorporated some of the notes from the editors of that series, Fran McCullough and Molly Stevens.It is very easy, with a big payoff!"

  • Preheat the oven to 325 degrees. Combine pork, 2 cups of water, zest, orange juice, garlic, and salt in a heavy dutch oven with a lid. Place in the oven and cook for at least six hours, but not more than eight.
  • Remove the pot from the oven. Scoop out the pork with a slotted spoon and put into a shallow baking dish. Shred the meat with two forks. At this point it should be so tender you hardly have to make any effort to separate it into delicious morsels. Discard any big chunks of fat.
  • Sprinkle the meat with the brandy or sherry and ladle a few scoops of cooking liquid back over the pork. (The reserved cooking liquid makes a wonderful base for bean soup.) Place under the broiler for a few minutes until sizzling.
  • Serve with Cuban black beans and rice, or use as a taco filling.

  1. Great combo, but seems to be missing the essential chipotles in adobo. I add several chopped ones - plus some oregano and sliced onions - to the mixture and crock away. Very good.

  3. Wonderful! I made a couple little changes. I used a pork roast instead of ribs and I used the crockpot. Low for about 7 hours. Very nice! I shredded the meat and added back to the juice. We used on tortillas. I wasn't sure we would like the orange juice, but it was wonderful. Thank you for sharing this recipe with us.
     
  4. We loved this recipe! The only change I made was cooking the pork in a crock pot. My kitchen gets too hot in the summer so 8 hrs on low made for succulent pork. My husband swears it is better than at our favorite resteraunt. Very easy to make, can't wait to make it for a crowd!

I read cookbooks like they are novels. I would be hard pressed to pick a favorite, but I love all of Nigella Lawson and Jamie Oliver's books as well as the Best American Recipe series. The book that I couldn't live without though, is the one I started in a notebook at age 15 while I was an exchange student in New Zealand. I am a research fanatic, and have to review at least five recipes for a dish before I decide which one to use. More often than not, I use elements from multiple recipes. My husband and I welcomed a little girl in December of 2006, and I am having a great time making her baby food. I am looking forward to teaching her how to cook and love food as much as I do. I have lost about 50 pounds since giving birth (gained 20 with the pregnancy) and feel very fortunate that this is the case - especially since I have not been working on if very diligently. My weight loss and my daughter have inspired me to try and eat in a healthier way, by using fewer processed ingredients and more whole foods. I am opposed to artificial ingredients such as Splenda. I am a Flight Attendant by profession (which is where sassySTEW comes in - although it could also apply to cooking).
