  1. These were delicious. I made a few changes: I made these as mini loaves. I used sprouted spelt and the dough was very dense. Rather than add another banana I used 6 TBSP of aquafaba, that I whipped just until it turned white ( it took less than 30 secs). I stirred it in using my Tivoli dough wisk ( my new favorite kitchen tool). I used baby bananas ( 4) instead of the traditional cavendish bananas. They were a bit green which I prefer as the sugar is reduced. I ommitted the nuts and added a bit of allspice and cloves; used grapseed oil; 3 Tbsp maple syrup ( I prefer my breads on the rustic side). Lastly I used an entire tsp of vanilla extract. They had a nice crust on the outside and they were nice and fluffy inside. This will be my go to banana bread recipe.

  2. I followed the recipe almost to a 't', except for that I used maple flavored agave syrup since I didn't have maple syrup. This is a delicious, easy cake to make! I love that it's vegan. I used whole grain spelt not refined for anyone that's wondering which to use as I was...

  3. This is yummy!!! Always excited to find good recipes that have healthier ingredients and tastes like it's an indulgence!! I added some pumpkin puree instead of 3rd banana because I only had 2 banana's and I had some leftover pumpkin from another recipe!! I also added cinnamon and all spice and used 2 tblsp of coconut oil instead of canola oil!! Turned out awesome!! My 18 month old son loves getting muffins and I feel good giving him this!!! Will be making this again!!

  4. Update: 2 days later this bread is still delicious, but as the flavors have developed I would definitely reduce the maple syrup even further. Next time I will add 3 TBS. Original review: This is the best banana bread recipe I've tried! It's very moist and flavorful. I reduced the maple syrup to 1/4 cup because I added some chocolate chips. Otherwise, I followed the recipe as written. Thanks for sharing!!!

  5. Delicious BB!! I used walnuts as I didn’t have pecans. Added 1/4 tsp cardamon as suggested by another reviewer and it was really tasty. Quick, moist and the house smells amazing! First time Spelt flour baker, its yummy!! Even my fussy hubby loved it!

Tweaks

  1. I loved it!!! I am new in the vegan world and was looking for a tasty vegan banana brad recipe so my family could enjoy...I'm glad I found it.. thank you !!

  2. I added cinnamon, chocolate chips and omitted the pecans (because I didn’t have any)

  3. I made a few substitutes as many have. One third cup of raw organic agave syrup instead of maple syrup, unrefined coconut oil instead of canola, and raisins instead of nuts. Delicious!

  4. I used half tsp. vanilla, and walnuts instead of pecans. Turned out well. I have made it both ways with either honey or maple syrup.

  5. Great flavor and texture. I used walnuts instead of pecans. I'm a fan of Hildegard von Bingen, a forward- thinking religious woman of the early 12th century in Germany. She extolled the virtues of spelt in one's diet. Don't know if she ever had bananas, but that's ok!!!
