  • Cook noodles in boiling water according to package; drain. Toss with the butter and keep hot and set aside.
  • While noodles cook, brown and crumble the beef with the onion until no longer pink; drain if necessary.
  • Add to skillet, the Rotel (undrained), corn, water, cumin, garlic powder, cayenne, pepper and salt.
  • Bring to a gentle simmer and cook for about 10 minutes.
  • Stir in the reduced-fat sour cream and blend well. Heat through, but do NOT allow to boil.
  • Serve over the hot cooked noodles.
  • Garnish with chopped cilantro.

I can't believe that I'm the first to try this wonderful recipe.:)Since there were only two of us eating,I cut the recipe down and this is how I did it.I cut the noodles down to 6 ounces,1/2 Tbs.1 margarine,1lb.ground beef,only 1 can of the Rotel,and half of everything else.I don't care for cilantro,so it wasn't used.And boy was it spicy:)This was served with Recipe#89030 and it with it so well.Thank you so much for posting."Keep Smiling :)"
