  • 14 cup flour
  • 1 teaspoon salt
  • 14 teaspoon pepper
  • 1 12 lbs round steaks, cut into serving pieces
  • 1 tablespoon oil
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 medium onion, . sliced
  • 1 (4 ounce) can green chilies, drained
  • 4 medium red potatoes, peeled and quartered
  • 4 carrots, cut in 1 in slices
  • 2 tablespoons cornstarch
  • 2 tablespoons water

directions

  • Mix flour, salt and pepper.
  • Dredge steak pieces.
  • Heat oil in dutch oven, brown the steak.
  • Add tomatoes and onion, stir.
  • Place chilis over steak, bring to a boil.
  • Reduce heat, cover and simmer 70 minutes.
  • Add potatoes and carrots, cover and simmer 25 minutes more.
  • Mix cornstarch and water, stir into pan.
  • Bring to a boil, stirring, until thickened and bubbly.

  1. We made this recipe while camping in MN. I premeasured all the ingredients and used a camp stove. I didn't realize it too 2 hours to cook it but it was worth it. I sometimes make recipes with round steak and find it to be to tough but this recipe showed me that cooking it longer makes it so tender and perfect. All ingreedients I already had on hand. We will make this again!!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
