Black Bean, Corn, and Salsa Dip--Weight Watchers

"I got this from my daughter. She had it with the baked Tostito Scoops. It was delicious. You can eat a whole cup and 15 scoops for 4 points, and one cup is a lot. Do you ever go to a gathering and there is nothing for you to eat if you are on Weight Watchers? Well now you can and you will enjoy it. It can also be used for a condiment. NOTE: I tried and tried to put in the Tostito Scoops in the ingredients and it wouldn't allow me, but you will need these for a dip."

  • Rinse and drain beans.
  • Add frozen corn (it will thaw in the bowl).
  • Add can of tomatoes and the salsa.
  • Mix well.
  • Serve with the scoops.
  • NOTE: 4 points for 1 cup beans; 2 points for the corn; tomatoes and salsa are free; 15 Tostitos are 2 points; TOTAL--1 cup dip with the 15 Tostitos is 4 points.

  1. Could this recipe be any easier? I think not! It's like Cowboy Caviar without the fuss. What a fantastic healthy lunch. I made this without the salsa, because I didn't have any on hand... I will try it with next time, though I didn't really miss it. I added cumin and some more basil, to suit my own taste. I ate this with low salt blue corn chips, an ancient sweet red pepper and some baby carrots. Super healthy and satisfying. Awesome recipe, thanks for sharing!
     
  2. I could get addicted to this! I used an 11oz can of drained MexiCorn and a can of undrained RoTel tomatoes. Didn't bother with the salsa as it was spicy enough. This was easy and perfect! Thanks!!
     
  3. I made this so I could have a snack and my son came home from work and ate almost all of it. I got some and next time i will make a double batch, lol.
     
  4. Great recipe! My wife and I really enjoyed this dip. I didn't have the Del Monte tomatoes, so I used plain diced tomatoes and added a teaspoon of oregano, basil and crushed garlic.
     
  5. I'm not rating as I changed the recipe by adding green and red peppers as suggested, and for using Rotal tomatoes in lieu of Salsa, also recommended. I will add I love WW recipes for the flavor without all the calories, yet I felt this recipe wasn't spicey enough for my Southern taste. Uing the leftovers in a Black Bean and Corn Enchilada recipe tonight.

  1. Very easy to prepare and very tasty! My hubby gobbled it up quickly and when I told him it was weight watchers he didn't believe me!!! A definite keeper!! Thanx for sharing :) UPDATE: I just made this again but instead of using plain corn, I used Pictsweet Seasoned Corn & Black Beans with tomatoes, pepper and onions...WOW!! Awesome!!!!
