Tomato Salad With Goat Cheese

ingredients
- 1 cup mesclun or 1 cup any mixed salad green, about 1 cup per person
- 4 large tomatoes, washed and sliced

Salad Dressing
- 2 tablespoons minced shallots
- 1 teaspoon mustard
- 2 tablespoons vinegar
- 6 tablespoons olive oil
- 8 ounces fresh goat cheese
- salt & freshly ground black pepper
- 4 tablespoons fresh parsley or 4 tablespoons fresh basil, chopped at the last minute
directions
- Cover each plate with a layer of mesclun or mixed greens. Place sliced tomatoes on top. Salt generously.
- Mix the dressing ingredients into an emulsion.
- Crumble the goat cheese onto the tomato slices.
- Season with salt and pepper to taste. Pour the dressing on top. Add the chopped parsley. Serve with a slice of country bread.

<p>A Very Happy Stay At Home Mom!!!! I have a soon to be 11year old that lives with his dad, his name is JayJay, and 3 living at home with me, and 1 on the way....I'm lovin' life! I love being at home with my children..love paying for ALL the stuff my 2nd grader brings home...soccer fees, and basketball fees, and book orders...I love cartin' my kindergartner around, and then coming home and cuddlin' with my little girl, and shopping for her favorite thing...shoes. My husband and I are as tight as 2 people can be, and I hate it when he leaves for work and can't wait until the clock strikes 4:30 because I know that means he's on his way home. Life is good. I couldn't ask for more.</p>
