  • Gently warm the Calvados + brandy together over a low heat & transfer to 2 lrg glasses (A balloon-shaped or squaty glass works best).
  • Dissolve sugar in hot coffee, add to liqueurs & stir.
  • While the contents are still rotating from the stirring, gently pour 1 tbsp of the cream over the surface in a circular motion. DO NOT STIR ~ just sip & savour.

  3. This is great. I don't know if the cream is supposed to give this effect like in my photo. I used heavy cream. It went down. I didn't heat the calvados and apricot brandy cause I did it only for 1 serving (for me). I didn't add sugar. Thanks Twissis. It was yummy!

I will be making this for Christmas Eve or Christmas Morning, and will report back with my taste findings (LOL) and photos......as if I need to try this to know it will be 10 star!! Joyeuses Fetes to you and your family! FT:-) Added on the 26th December 2007: I made this TWICE over the Christmas period - it was silky and smooth and absolutely delectable! I decided to use a VERY special glass for this, as befitting an old French recipe: I used an early 19th Century French Souvenir glass - it looked wonderful served in it! I ran out of double cream and only had whipped cream - I KNOW this will look so much better with the cream float on top - but it was still an amazing taste with the whipped cream. Thanks MP for such a wonderful old French beverage recipe - I am planning on making these for New Year as well! Beautiful! The mix of the calvados and apricot brandy is an inspiration - a great combo.
