  1. This sandwich is so yummy! My sis and me enjoyed the spread a lot on a white roll (Im sure whole wheat would have been great, too, though). The carrot goes great with the pb and dried fruit (I used craisins). The sunflower seeds add a nice crunch and earthy note. I didnt have enough pb on hand so I added some plain yogurt to get a creamy consistency and still the taste was very intense.<br/>THANK YOU SO MUCH for sharing this recipe with us, Ana! <br/>Made and reviewed for one of my PAC babies October 2012.
     
  2. Really enjoyed this sandwich. Made for breakfast this morning by placing in a hot frying pan just till the bread toasted and the peanut butter was melted into the carrots. Addition of carrots adds wonderful texture and nutrition. Will be making aging. Thanks for the post.
     
  3. i love this variation of the standard pb&J. Followed your recipe to a t and wouldn't change a thing. Almost like granola on toast, which is how I did my bread. Used a multi-grain for x-tra fiber!!! Thanks alot Annacia.~ Made for 123HitWonders.
     
  4. This is good! The first time I made it as written, and we found it to be too sweet for our tastes and not crunchy enough. Next time I doubled the shredded carrots and sunflower seeds, and omitted the honey. That turned out to be the perfect concoction for us. It's especially good in a whole wheat pita. Thank you for shaking up our peanut butter sandwiches!
     
  5. What a terrific new version of chunky p.b.! I think it would be good on crackers too. (I subbed agave nectar and a little extra carrot.) Absolutely delish! Update: any leftovers are good eaten with by the spoonful, esp. with banana slices! Try it!!
