Hoisin-Orange Chicken Salad

"Adapted from Chinese favorites booklet from the grocery store. Original called for making lettuce wraps. I would prefer serving over lettuce or in tortillas. Haven't made yet - posted for Chinese New Year tag."

Serves:: 4

ingredients

¹⁄₄ cup hoisin sauce
¹⁄₂ teaspoon orange peel, freshly grated
¹⁄₄ cup orange juice
2 cups shredded coleslaw mix or 2 cups shredded cabbage
2 cups cooked chicken, diced (about 1/2 pound)
black pepper
8 boston lettuce leaves

directions

Combine hoisin, orange peel and juice in bowl. Mix in coleslaw mix or cabbage, chicken and black pepper.
Arrange lettuce leaves on plates or platter and arrange the chicken salad over the lettuce.

I live in NC and work as a marketing executive for a title insurance company. I live with my husband and 2 daughters in a house built in 1883 that we are restoring.
