Fantastic Shredded Beef Enchiladas

  • Place roast in a large saucepan with a tight-fitting lid. Cover roast with water and simmer on low for 30 minutes. Increase heat to medium/high and brown roast on all sides. Once the water has boiled away and the roast is browned, add beef broth, vinegar, chili powder and cumin. Cover tightly, reduce heat to low and simmer for 1 1/2 to 2 hours or until beef falls apart. Shred the beef. Place shredded beef back into saucepan with all the juices and cool to room temperature.
  • In a large skillet, saute onion util soft. Mix in flour and green chilies. Stir for 2 minutes to cook off the flour taste. Stir in sour cream and 2 cups of the Monterey Jack cheese. Cook on low for 10 minutes, stirring often, until the cheese is melted and mixed thoroughly. Set aside and let cool.
  • In a large heavy skillet, heat the olive oil. Fry the tortillas in the hot oil for 30 seconds on each side. Drain on paper towels.
  • Preheat oven to 375 degrees. Spread 4 tablespoons of sour cream mixture down the center of the tortilla. Top with the same amount of the beef mixture (yes, this will be juicy and messy). Roll up and place seam side down in baking dish. Repeat for each tortilla, until you are out of filling. Sprinkle with remaining Monterey Jack cheese.
  • Bake in pre-heated oven for 30 minutes or until cheese is melted and bubbling.
  • **Note: If you prefer a milder dish, omit the 4 ounce can of jalapeno peppers and replace it with another can of diced green chilies.
  • I serve each enchilada on a bed of shredded lettuce sprinkled with diced tomatoes. I top each enchilada with a dollup of sour cream and serve with a side of salsa.

  1. Pretty good, but mine turned out dry. I made my own tortillas because I won't eat GMO corn. Next time l will make sure there is more beef juice. Also, the recipe is unclear. When it says 'cover the roast', I assume it means cover it with water. But apparently that is just with 1/4 c? Also did not need 1 cup of oil to fry the tortillas. Not even close. I also didn't like the addition of vinegar. Made the meat taste weird. There is no way they can cook for a half hour without drying out. Without sauce, they cook quickly. I'd say 15-20 minutes tops.
     
  2. I made these tonight for the first time. I forgot to add the vinegar to the meat originally so added a splash after it was cooked. I found the cheese filling a bit spicy so I will cut down on the peppers next time. I also used flour tortillas. I thought the oven temp and cook time was a bit too high - the tortillas were too crispy around the edges making them hard to cut. Will adjust next time. Overall they were really good and I will make them again.

  3. INCREDIBLE! The absolute best beef enchiladas I have ever had. Huge hit with my family, my six year old was begging for them again. Only modification I made was slowcooking the beef roast overnight in the crockpot, woke up to the best smell! Perfect Sunday lunch/dinner!
     
  4. This was great. The meat was fabulous. The only thing I will do different next time is not bake it for 30 mins. I put my oven on 360 and that was to hot. The ends of the shells got to crispy. I would only leave in the oven just long enough for the cheese to melt and that won't take 30 mins.

I live in northern Minnesota with my husband. We have a dog, Buddy, who is a shepherd-collie mix. We also have a cat, Tigger, who is a brown Tabby. We both like to cook, but I'm the one that gets our meals on the table on a daily basis. My husband enjoys his role as reviewer/critic. I know a recipe is worthy of a 5-star review when my husband gives me a "top shelf, baby" after finishing his meal. If I don't hear that phrase, it just isn't a 5-star recipe. So far, I've always agreed with his reviews. If I ever think he's wrong, I'll have to rethink our system! I've never been a really good cook, but I've always been great at following directions. Thanks to recipezaar, I just have to find the great recipes and they make me look good! It really doesn't get any better than that!
