Oreo Cookie Cupcakes

"From Simple and Delicious magazine Sept 2007 - submitted by M. Wiebe. A quick and easy cupcake to throw together that is different from the usual white cupcake. Kids seem to love these. (Prep time does not include time it will take for cupcakes to cool completely)."

ingredients

  • 1 (18 1/4 ounce) package white cake mix
  • 1 14 cups water
  • 14 cup canola oil
  • 3 egg whites
  • 1 cup cream-filled chocolate sandwich cookies, coarsely crushed (like Oreos, about 9 cookies)
  • 16 ounces vanilla frosting (can be purchased, freshly made, etc.)
  • 14 - 12 cup Oreo cookies, coarsely crushed for topping (additional)

  • In a large mixing bowl, combine the cake mix, water, oil and egg whites. Beat on low speed until moistened, then beat on high for 2 minutes.
  • Gently fold in cookie crumbs (1 cup).
  • Fill paper lined muffin cups 2/3rds full.
  • Bake at 350F for 18-22 minutes or until a toothpick will come out clean.
  • Cool for 10 minutes before removing to wire racks to cool completely.
  • Frost cupcakes and sprinkle with additional crushed cookies.

  3. These were a big hit with the younger crowd at a church function. Easy and tasty, what's not to love about Oreos? I used Recipe #19353 for frosting which was a bit heavy for these light cupcakes, but it did hold the Oreo crumbs nicely. I'll definitely make these again! Made for Potluck Tag
     
  4. These are so yummy Melly. I knew they would go over here as DS#1  like Oreo's. (I was making these as DS#1 was visiting and he took 6 home as he walked out the door). :-0 We make something similar to these at the restaurant I work for only in sheet cake form. It goes over really well. Just for the frosting part I used..recipe#309346 by Kittencal. Thanks for a winning recipe and family pleaser. Made for Potluck Tag~
