Applesauce Spice Cupcakes

"This is a TOH recipe. I've had it for several years now. This recipe makes great snack muffins for the little kiddos. It reminds me more of a quick bread than something cakey. These freeze very well. The original recipe calls for cream cheese frosting. I however have never added the frosting. The kiddos don't even notice. :)"

Ingredients:: 12
Yields:: 12 muffins
Serves:: 6-12

ingredients

¹⁄₃ cup butter or 1/3 cup margarine, softened
³⁄₄ cup sugar
2 eggs
1 teaspoon vanilla extract
1 ¹⁄₃ cups flour
1 teaspoon baking powder
¹⁄₂ teaspoon baking soda
¹⁄₂ teaspoon salt
1 teaspoon ground cinnamon
¹⁄₂ teaspoon ground nutmeg
¹⁄₈ teaspoon clove
³⁄₄ cup applesauce

directions

Combine all ingredients in large mixing bowl.
Mix well.
Fill greased or paper-lined muffin cups 2/3 full.
Bake at 350 degrees for 25 minutes or until cupcakes test done.
Cool for 10 minutes before removing to a wire rack.
Frost cooled cupcakes if desired.
*This can also make this cake in a 15 x 10 inch baking pan and frost.

Simple and tasty. You'll probably have better results using the tried-and-true creaming method, rather than just throwing everything in the bowl as the recipe suggests. Cream the butter, then add the sugar and whip it until fluffy, add eggs and vanilla and mix until completely incorporated. Whisk together the remaining dry ingredients, and then add them alternately with the applesauce in 2 or 3 steps. Do not overmix. I baked mine for about 18 minutes...25 minutes would likely give you burned or at least very hard, overbaked cupcakes. Tap the top of one, and if it bounces back easily without leaving an indent, they're done.

I live on the Oregon Coast with husband and four boys. I am able to stay at home with them and hold down the fort. I have many cookbooks which I enjoy searching through for our family favorites. I recently started working as a home health care worker for seniors with disabilities (which I absolutely love), I love to quilt, crochet, bake, read, garden, watch the rain (which happens quite frequently here) and play with my kids. I am passionate about canning, canning, canning. I will admit I like admiring all the hard work after the jars are placed on the shelves. hehee I am all for if I can make it myself I will. Yes...I am frugal. I also love to bake. Especially homemade bread. I will continue to do so until arthritis takes over my hands. Then I will use more of the mixer for the kneading part. All recipes I post are ones I've made and are our famiy favorites. I love pretty flowers. These flowers grace our yard every year.
