Roast Pork Puertoricano

"I adapted this recipe from a recipe I copied from a cookbook a while ago. It's pretty simple to make and tastes really fresh and different from most other roast pork recipes. I serve it with rice and beans and a tomato salad."

  • Combine all of the ingredients in a big covered dish or a gallon-size plastic storage bag. Try to squeeze out all the air.
  • Marinate in refrigerator for at least 2 hours but if possible overnight. Turn the meat/bag a few time.
  • Preheat the oven to 450 degrees. Add the meat to a roasting pan and add all of the marinade.
  • Roast at this temperature for 5 minutes, then lower the temperature to 350 degrees and roast until a thermometer shows you that the pork is 165 degrees. About 20 minutes. Don't overcook or it will dry out. Let stand for 5 minutes before you cut the roast.

  1. This was very good. I only used one jalapeno (and it was a pretty mild one) as I was afraid using two for the small amount of meat would be a waste. I might try pickled jalapeno next time for more heat. The orange flavor came through nicely though. I marinated about 16 hours or so (overnight). It did take a bit longer than 25 minutes to complete cooking - about 20-25 minutes more in my oven. I took out at a little over 155°, letting it coast up to 160° out of the oven. Juicy and tender - delish! Thanks for sharing :)
     
  2. Yummmmeh. I loved this pork roast. Spicy, savory and delicious.... just like me :) My kids hated it, but they didn't try it so that doesn't count. My DH liked it, and I loved it.   3. I was really scared once I ate a slice of the jalapeno I was marinating with....I grew them myself, and I found that it was much hotter than the peppers I got at the store. But this turned out delicious...not too hot...just right. It took a little longer to get it to the right temperature, but that turned out great...gave me time to get my sides ready! Loved the recipe.   4. This smells so good and tastes wonderful too! I especially loved the jalapeno's after they had been roasted on top of the pork. I marinated the meat over night and the heat from the jalapeno went all throughout the pork. Gracias Bellinda! Made for ZWT 5 by an Epicurean Queen!

I grew up in Germany but my background is German/Spanish/Irish/Native American. I would say my cooking style is a mix of all of them. I like to cook simple clean food. I usually don't use any packaged or processed products. Most of the time I make everything from scratch. I use only organic meat and dairy products and many other organic products and I believe it makes a big difference not only healthwise but also in taste. We have two kids. A 3 year old and a 9 year old. I try not to adapt the food for them too much. They are used to eating what we eat. Growing up I didn't really learn how to cook. At least I didn't care enough to remember anything.But living centrally in Germany I was able to travel and eat European food in it's respective Countries: Italian food in Italy, Spanish food in Spain, French food in France and so on. I really missed that when I moved to the States. I started cooking the week after I got married and have been cooking and teaching myself ever since. Now cooking is not only one of my two hobbies (photography being the other one)but I also see it as therapy. It calms me down after a stressful day, it cheers me up when I feel down and it helps me center my thoughts when I have a lot on my mind. :) Thank you so much to whoever gave me the gift of premium membership.
