Low Carb Pancakes

"This recipe came from the 1984 World's Fair official cookbook. They are soft in the center (which I love) and contain very little flour. The cottage cheese sounds strange but it works. (And normally, I wouldn't touch the stuff.)"

  • Sift flour.
  • Add remaining ingredients and beat until well blended.
