Deep Chocolate Vitamuffin Copycat Recipe

"I like Vitalicious VitaMuffins because they're so healthy and tasty, but they're expensive. I searched online for recipe clones and found ONE! It isn't mine, but I thought a lot of people here would appreciate it being posted. It doesn't have quite as high a percentage of vitamins as the original, but I hope they taste just as good for so relatively few calories. This recipe also works if you decide to use a regular baking pan/sheet instead of a muffin pan. *************************************************************************************** INGREDIENT SUBSTITUTIONS AND TIPS: Instead of fat-free half-and-half cream, you can use the equivalent amount of nonfat evaporated milk. Instead of unsweetened applesauce, you could use the equivalent amount of plain nonfat yogurt. Instead of using 3 egg whites, you can substitute 2 eggs + 1 egg white, or for baked goods that brownie-like (very moist and even tastier), use the equivalent amount of regular egg substitute. RecipeZaar doesn't have the nutritional info for the clear fiber supplement, but Benefiber makes one that completely dissolves and is taste-free and 0 calories.   • Prepare 24 cupcake papers.
  • Mix all dry ingredients together.
  • In a separate bowl, add all wet ingredients except for 1 1/2 cups hot water.
  • Mix together both wet and dry ingredients, while slowly stirring in hot water.
  • Do not overmix.
  • Slowly stir in chocolate chips.
  • Evenly scoop into cupcake papers and place on top of cookie sheet.
  • Bake at 350 for about 9-12 minutes or until toothpick comes out clean.
  • Let cool for 10 minutes. TIP: Do NOT forget to cover the pan with aluminum foil or another pan as soon as you take them out of the oven! (If you don't, they will dry out!).

  1. I have never had a Vitamuffin, but I know they have following so I decided to try this recipe. My muffins came out dry looking on the top, but moist on the inside and although they are not very sweet, the chocolate chips give it just the right amount of sweetness. I did not use Splenda, I used erythritol instead, which is a fantastic, natural, no calorie sugar. I also did not use liners, I just sprayed the tins and the muffins popped out nicely. Thanks for the recipe.
     
  2. I used Greek yogurt in place of the sugar free applesauce and I added a little extra cocoa powder. I just placed the chocoalte chips on the top so they would be like Vitatops. I have the Vitatops muffin pans which I used. I sprayed the pans generously with cooking spray. They turned out wonderfully, I was very impressed. I have purchased Vitatops at the store and online and I have also purchased the mix. This recipe was not quite as good as the mix but I thought it was better than the premade ones.
     
  3. Decent. They didn't taste like vitamuffins to me as they were not as dense. But they had ok flavor and I like the nutritionals. I used white wheat flour and mini chocolate chips. Next time I would, like some suggested, put some in the batter and put some on top as they all settled on the bottom. They are a tad spongy like most fat free products, but not bad and a decent lunchbox snack.

Disclaimer: I modified this recipe by: using all purpose flour (I didn't have any whole wheat), reduced sugar to 3/4 cup, reduced choc chips to 1/3 cup and used f/f evaporated milk instead of half and half. I used Benefiber Clear for the fiber supplement. Having said ALL that, these are delicious! I've never actually had a real vitamuffin, but I did not want to shell out the $$ to try them, so I had all these ingredients in my pantry and decided to whip up a batch. I did not use cupcake liners, and was just really generous with the cooking spray on naked cupcake pans. The muffins came out just fine. Also, regarding the dryness issue? Mine WERE dry, but I found by covering them overnight, the tops got nice and moist. No need to add extra calories by spraying.
     
  5. I was VERY skeptical about this recipe based on the reviews, and a made a few minor changes, but I think they turned out GREAT! I added 1/2 teaspoon of almond extract on top of the vanilla already called for. Then, I mixed 1/4 of the choco chips in the batter and sprinkled the rest on top before baking. I made these into vitatops instead of muffins...as soon as they came out of the oven I gave the the TINIEST spray of Pam because they did look a tad dry. I think the key is to not overcook them. I am sold on these, they are a great substitute for the very expensive original.
