ingredients
- 2 ounces peppermint schnapps
- 1⁄2 ounce blue curacao
- 1 ounce lemon juice
- 4 ounces club soda
directions
- Combine schnapps, liqueur, and juice in a mixing glass.
- Add ice, shake, and pour contents into a Collins or highball glass. Top with club soda and stir gently.

This was a great cocktail--and such a lovely blue hue, too. The lemon juice really helped to offset the sweetness, but the peppermint Schnapps really is the star of this drink. I wanted a second, but I didn't want so much of the peppermint essence. So I cut the Schnapps to 1 1/2 ounces for my second, and it was the perfect nightcap to top off a hectic day. Thanks for sharing your recipe, refrigerator raider. Made for Spring 2010 Pick-A-Chef. -

I live in Central, TX where I recently graduated college and passed my state boards for Registered Nursing! YEAH! I recently got married to my best friend. I am chef#209747's daughter so I have always relied on Mama to cook for me. I am now learning fast but still call her with lots of questions! My chef name comes from an old TV commercial. When I was little they called me 'refrigerator raider' and said that I was easy to babysit as long as you had a refrigerator I could raid!
