  • Rinse peas, place in pot with seasonings.
  • Cover with water.
  • Cook uncovered (adding water as needed) till done.
  • Serve over rice with jalapeño corn bread.

  2. These were delicious, and perfect for New Year's. I used bacon, and all ingredients as listed. I wouldn't change a thing.
     
  3. We all enjoyed this recipe. I used two cans of black eyed peas, half of a can of Rotel, and no bacon. I usually also add 1/3 of a red bell pepper and use 1/3 of a green. Very tasty!
     
  4. I was in dire need for some blackeyed peas and I found this wonderful recipe. I happened to have all the ingredients on hand except the salt pork/bacon. But I did have one ham hock and one very thick boneless pork chop. I cut up the chop and sauted it a little and threw it in with the ham hock. Cooked for about 2 1/2 hours. and gorged. and I loved every minute. Thanks for a great recipe.
     
  5. Tastey and healthy! I used center cut bacon and trimmed extra fat off of that. I loved it and plan to put a jalapeno in next time. I cooked mine in the crockpot overnight and it turned out great.

We live in a great neighborhood just outside of San Antonio. We are retired and entertain a lot in addition to having family & children around whenever possible. I grow my own vegetables and herbs. I like to go to the Hill Country for fresh peaches and love to can them for year round use.
