More Veggies Than Meat Meatloaf

"Because of a medical condition I had to cut my fat intake to nearly nothing. Out of sheer boredom I created this "meatloaf" recipe. The medical problem is gone but we still make this a couple times a month because it is so good. Gimme Lean is vegetable protien, it just looks like hamburger. You can substitue ground turkey for the ground chicken."

  • Mix everything but the ketchup with a mixer.
  • Spray LARGE loaf pan with Pam.
  • Pack mixture into loaf pan.
  • Top with ketchup.
  • Bake at 350 for 1 hour.

  1. WOW! I was going to post my recipe for vegan meatloaf, but I thought I'd give you're a try and I'm glad a did. It's a bit different, but it was delish! I did make yours even leaner and cut out the chicken and replaced it with Lightlife's chick'n strips. (which I had to cut up into minced pieces, small enough to go with the mix) It sounds like a lot of effort, but it's not. Really. I do it all the time with my recipe for meatloaf. I also replaced the 2 eggs with a vegan egg substitute and eliminted the ketchup because ketchup is sugar and I don't "do" sugar (hence my name)- LOL! Instead I chopped up tomatos, which only takes seconds when you used that "Vidallia Onion Chopper". I'm so happy to find this recipe and I hope you've got more LEAN recipes. I'm going to go "raid" you recipe box now. Thank you for sharing!

<p>I'm the person that all my family and friends call if they need a recipe. I'm a great cook, but don't get that much cooking in because of the way my husband and I have chosen to eat/live. We eat mainly raw and lightly steamed vegetables,fruit in season, grilled fish, grilled chicken breasts, ground white meat turkey and occasionally 3 oz. of lean beef or pork. We cut out almost all dairy and white sugar and flour. <br /><br />Not only have I lost 101 pounds but my husbands cholesteral has lowered 75 points. We plan on living forever. Good Luck-Huh? <br />But, since I am a foody, I get my cooking/recipe fix by reading recipes on this site. I love it.</p>
