- 4 eggs
- 3 cups sugar
- 1 cup vegetable oil
- 2⁄3 cup water
- 15 ounces pumpkin
- 3 1⁄2 cups flour
- 1 1⁄3 teaspoons salt
- 1⁄2 teaspoon baking powder
- 2 teaspoons baking soda
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 3 tablespoons butter
- 1 cup powdered sugar
- 1 teaspoon hot coffee
- 1 teaspoon vanilla
directions
- Beat eggs & regular sugar.
- Add oil.
- Combine dry ingredients (up to nutmeg) and add alternately with pumpkin and water.
- Bake 1 hour at 325 deg F.
- Topping: melt butter and combine with powdered sugar, coffee and vanilla, then spread over warm bread.
