  • 1 (18 1/4 ounce) box yellow cake mix
  • 3 eggs
  • 13 cup oil
  • 3 -5 mashed bananas
  • 1 cup chopped pecans

directions

  • Preheat oven to 350 degrees.
  • Grease and flour 2 loaf pans or 1 large bundt pan.
  • Mix all ingredients together until well blended and pour into pan(s).
  • Bake for 30-35 minutes (45 minutes, approximately for the bundt pan) or until toothpick inserted in the center comes out clean.
  • Remove from oven to cooling rack for 10 minutes before removing from pan.
  • Cool completely on wire rack.

  1. Used 4 bananas. Substituted melted butter for oil. Added 1/2 cup flour since batter was a bit thin. Added 1 teaspoon cinnamon. Turned out great! Will definitely make again. ??

  5. Perfect just the way it is. We make it all the time with left over brown bananas and extra nuts. I make it in small aluminum loafs pans and freeze. My kids do it themselves no mess and 1 dish clean up. They just use a mixing spoon and that's all! We eat it toasted in the morning for a nutritious breakfast. Fresh or frozen it can not be beat.

  1. Thanks for the recipe. It tasted very good, everyone liked it. But it was like a banana cake instead of bread. I only had 3 large banana's. Maybe 2 more would have given it a denser texture. It was a hit<br/>just not what I was wanting. I will make again if I want banana cake.....they loved it. I put a little cream cheese frosting just on top...got great feed back on the good banana cake.
     
  2. I've made this twice now. The first time with a yellow cake mix, 4 medium bananas and I baked in 2 - 8 x 4 loaf pans. The loaves rose *very* high and took almost an hour to bake. I liked the texture, but the yellow cake mix flavor overwhelmed the banana flavor. The second time I used a vanilla cake mix, 4 large bananas and baked in 3 - 8 x 4 pans. This time the banana flavor came through and they were done in 35 minutes. The loaves obviously weren't as large, but that's ok. Next time I'm going to try 2 - 9 x 5 pans and 5 bananas. I *will* stick with the vanilla cake mix instead of yellow, as I think it allowed the banana flavor to come through more. Thanks for this super easy and quick recipe that *almost* rivals the not as easy and not as quick versions!
